How to Make Harry Potter-Inspired Butterbeer Cookies

This recipe for butterbeer cookies is from TikTok creator @chizobacu, aka Chizoba Uwakwe. In a video with over 450,000 views so far, Chizoba uses a recipe from In Bloom Bakery to whip up some butterbeer goodness worthy of a Great Hall feast. Here’s how to make Hogwarts magic in your kitchen, too.

@chizobacu 🍪 Wizarding World Butterbeer Cookies (Butterscotch cookies) 🍻 I love Butterbeer, so when I found this recipe by @In Bloom Bakery for Butterbeer cookies on Pinterest I had to try it out. These cookies & the Harry Potter Prequel Fantastic Beasts made for a perfect and cozy night in the wizarding world. For my non Harry Potter fans, this is basically like a Butterscotch cookie. ⚡️ This recipe was fun and easy to make. Here’s what you need to try it at home. For the Butterbeer Cookies 2 cups all-purpose flour, spooned and leveled ½ tsp baking soda ½ tsp baking powder ½ tsp salt ¾ cup unsalted butter, softened ¾ cup light brown sugar, packed ¼ cup granulated white sugar 2 egg yolks, at room temperature 1 tbsp vanilla extract ¼ cup butterscotch chips, melted and slightly cooled ½ cup butterscotch chips For the buttercream ½ cup unsalted butter, softened ⅛ tsp salt ½ cup butterscotch chips, melted and slightly cooled 1 cup powdered sugar ½ tsp vanilla extract I will link to the full recipe in my bio. #harrypotter #butterbeer #cookies #cozy #harrypottertiktok#cozy#recipealloween #fall #autumn #movienight #butterscotch #baking ♬ Harry Potter (El mundo mágico de Harry) – Film Symphony Orchestra

Ingredients

Cookies:

  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, room temperature
  • 1 tablespoon vanilla extract
  • 1/4 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup butterscotch chips

Buttercream:

  • 1/2 cup unsalted butter, softened
  • 1/8 teaspoon salt
  • 1/2 cup butterscotch chips, melted and slightly cooled
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Directions

Step 1: Mix the dry ingredients

First things first, preheat your oven to 350°F. (Did you know there’s a scientific reason why most recipes call for preheating the oven to 350°?)

Then, add flour, baking powder, baking soda and salt to a medium bowl. Promptly whisk together—the right way!—and move the mixture to the side.

Step 2: Mix the wet ingredients

Next, add the butter, brown sugar and white sugar to a large bowl. Use a stand mixer on high for 2-3 minutes until the butter and sugars are creamed together. From there, add the egg yolks, vanilla extract and melted butterscotch chips to the bowl before mixing on medium speed for 1 to 2 minutes.

Step 3: Combine the wet and dry ingredients

Use your mixer on a low speed until the two are fully meshed. Then, take the unmelted butterscotch chips and stir them fully into the dough. The recipe recommends using a rubber spatula.

Step 4: Scoop dough onto a cookie sheet

For each cookie, drop 2 tablespoons of dough on a baking sheet lined with parchment paper. Each of the cookies should be about 2 inches apart. Go ahead and pop into the oven and let them bake for 10 to 11 minutes. Let the cookies cool on a baking rack.

Step 5: Make the buttercream

Grab all of your buttercream ingredients and use a stand mixer to combine thoroughly in a large bowl.

Step 6: Frost the cookies

Once the cookies are cool, use a mini spatula to frost each one with buttercream. Have fun with by drizzling caramel and sprinkles on top, too. These cookies definitely earn a Hogwarts stamp of approval.

Enjoy while you stream the Harry Potter saga on Max!
