Breakfast sandwiches are a family favourite around here. We are always trying to change things up because we make them so often. I recently remembered this super-easy way to make egg sandwiches and I just had to share it.

My first ‘real’ job, other than babysitting, was working at a coffee shop. It was a short-lived employment because I quickly realized that I am not a fan of the hours. Even at 15 years old I knew that working late at night was not my cup of tea (pun intended).

Anyway, in my short stay in the food industry I learned this very efficient way to make an egg sandwich. We had to be quick and getting these bad boys out so it’s obviously a very quick method.

The other benefit is that there are minimal dishes to wash because all you’re using is a bowl and a cutting board. If you insist on eating off a plate, you’ll also have one of those to wash. Easy-peasy!

Preparing the 4-Minute Breakfast Sandwich

The Bagel

Start with the bagel. Believe it or not it will take the longest to toast. The kind of bagel that you use is entirely up to you. If you can get your hands on a delicious Montréal style bagel then definitely use that one but otherwise pick your one of your regular favourites. In terms of flavours my preference is to use an everything bagel, poppy seed or sesame seed. If you’re a fan of stronger flavours an onion bagel would be delicious!

Back to the recipe though!

Cut the bagel in half and put in the toaster. Mine usually takes about three minutes so this time may vary depending on the type of toaster you have. I also like to use the bagel setting because I like only the inside of my bagel toasted.

Preparing the eggs

With the bagel in the toaster, you can move on to make the eggs. Start by chopping some green onions. Next, crack two eggs into a small microwave-safe bowl. There are two main requirements of the bowl: that its microwavable and that its small, about the diameter of your bagel. This will ensure that your eggs don’t explode in the microwave (don’t worry it’s not dangerous, just a bit messy). Plus, the eggs will fit nicely on your bagel.

Add salt, pepper, green onions and milk. Whisk until the eggs are well beaten and all ingredients are well combined.

Place the bowl in the microwave for 2 minutes. I like to place them under a microwave dome just in case they do explode. This shouldn’t happen if the eggs are in the microwave for just two minutes however if your bowl is wider and shallower then it is a possibility. You can use cling wrap to cover the bowl if you don’t have a dome like mine.

When taking the bowl with the eggs out of the microwave use oven mitts or a potholder because the bowl will be very hot. And make

sure to place the bowl on a cutting board or a coaster so you don’t ruin your countertop.

Assembling the Breakfast Sandwich

While your eggs are in the microwave and the bagel is in the toaster, prepare your sandwich toppings. I used avocado and tomato to keep it quick and simple but the options really are endless. See the Serving the 4-Minute Breakfast Sandwich section for more amazing options

Start assembling your sandwich by buttering one side of the toasted bagel. Next, using a rubber spatula, scoop the eggs out of the bowl and place on the buttered side of the bagel. Add a couple of slices of tomato and avocado and finish off with some more salt and pepper.

That’s it! A breakfast sandwich ready in no time, with no fuss.

Substitutions

Bagel: You can use any type of bagel that you like. There really is no wrong choice here – although maybe sweet bagels wouldn’t be the best, but who am I to judge? You can also replace the bagel altogether with an English muffin or toast.

Eggs: The egg mixture can be made of just eggs if you prefer not to add anything. You can also replace the green onions with chives. The milk is not a necessity but keeps the finished eggs nice and moist. Lastly, you can add just about anything you like here. Just keep in mind that your ingredients won’t actually cook in the two minutes in the microwave. Consider adding some extra flavour with herbs like oregano or spices like paprika.

Serving the 4-Minute Breakfast Sandwich

I had a hard time writing this section because there are just so many options here. I have decided to stick to my absolute favourites but know that your options are as wide as your imagination. Here are my favourite groups of toppings that don’t add extra time to this quick breakfast sandwich:

  • Tomato
  • Avocado

Simple Elevated:

  • Tomato
  • Avocado
  • Cheese (smoked or sharp cheddar if you have it)
  • Red onion
  • Hot Sauce

Mediterranean:

  • Crumbled Feta cheese
  • Kalamata olives
  • Tomatoes

Caprese:

  • Buffalo mozzarella
  • Pesto or fresh basil
  • Tomato

Mexican:

  • Cheese (Obviously queso fresco is the choice here but if you don’t have it try Monterey Jack or jalapeno Havarti)
  • Salsa
  • Fresh or pickled jalapenos
